Baked Potato Soup
Ingredients:
· 4 medium baked potatoes
· 2 slices bacon
· ½ cup chopped celery
· ½ cup thinly sliced green onions with tops
· 1 can (14 ½ ounces) chicken broth
· 1 ½ cups milk
· 1 pressed garlic clove
· ½ tsp salt
· ½ tsp ground black pepper
· 1 cup light sour cream
· 2 ounces (½ cup) shredded cheddar cheese
Preparation:
Remove skins from baked potatoes and mash together in bowl. Cook bacon, then remove to paper towel and drain. Crumble and set aside. Chop celery and thinly slice green onions. Add chicken broth, milk, mashed potatoes, celery, onions, garlic, salt and pepper into pan. Bring to a boil. Reduce heat and simmer 10 minutes. Stir in sour cream and bacon then serve.
